National dish- Plov

Palov, also spelled plov or osh, is the national dish of Uzbekistan. It's a hearty one-pot meal, typically featuring: Rice: The base of the dish is usually long-grain rice, cooked to fluffy perfection. Meat: Lamb or beef are most common, but some variations might include other options. Carrots: Thinly sliced and adding vibrant color and sweetness. Onions: Diced and sauteed for a flavorful base. Traditionally, palov is cooked in a large cast-iron pot called a kazan over an open fire. This allows for even heating and prevents burning. There are countless variations depending on the region, some including: Chickpeas: For added texture and protein. Raisins or barberries: For a touch of sweetness and tartness. Spices: Cumin, black pepper, and others add depth of flavor. Beyond its deliciousness, palov holds cultural significance. It's a symbol of Uzbek hospitality and is often served at celebrations and gatherings. In some families, palov preparation is even considered a man's domain, passed down through generations.
