Shoujin (Buddhist monk diet) lunch set

精進料理, or shoujin ryouri, is the traditional diet eaten by Buddhist monks. In accordance with Japanese Buddhist tradition, they do not eat meat or animal derived products like eggs or dairy. Even today, you can find shoujin ryouri at temples that open their doors to travelers (you can stay there, like at a B&B) and even specialty cafés and restaurants. While the concept of vegan food is still not well-known in Japan, this culinary tradition goes back hundreds of years. And it's delicious and healthy!
