"Handkäse" literally translated "Hand Cheese" is a cheese, which originated and is popular in the german state of Hessen. The cheese itself being sort of a sour milk cheese, is widely known for its stinky smell and therefore an aquired taste for many.It is usually eaten as "Handkäs mit Musig" - as it is written and pronounced in the hessian dialect - in englisch this translate to "hand cheese with music". The so called music refers to the marinade the cheese is put into.It is a mixture of diced oninons, vinegar, oil, pepper, salt and sometimes caraway. The music refers to the combination of oil and vinegar, which add the flavour or rather music to the dish. It is usually served with sourdough bread.The cheese originally dates back to the 18th and 19th centuries and lends its name to the fact, that it was originally formed by hand.
