Transylvanian chimney cake
Kürtőskalács, or chimney cake, is a traditional pastry from Transylvania. It is made by wrapping strips of sweet yeast dough around a wooden cylinder, coating them with sugar and baking them while slowly rotating over hot coals. During baking, the sugar caramelizes and creates a crisp golden crust, while the dough remains soft inside. It can also be coated with walnuts, cinnamon or coconut. This pastry is often enjoyed at fairs, celebrations and Christmas markets, and it is an important part of Transylvanian culinary tradition.
